In this chapter, we look at the merchant-side problem that must be understood before improving food images. In the presentation, the speakers explain that, especially for small independent merchants, listing photos may not accurately represent the food customers will actually receive.

The first distinction to make here is between the observed symptom and its operational causes. The symptom is a mismatch between the photo and the food. This does not only mean that the photo is blurry. It means that customers who look at the photo may not be able to form an accurate idea of the food they will receive.

Small merchants may find it difficult to maintain a setup for taking attractive photos of their food and updating those photos continuously. From conversations with merchants, the presenters identify three themes that repeatedly create this difficulty.

この三つは別々の問題ですが、互いに影響します。時間がなければ自分で撮影する準備ができません。知識が足りなければ、時間をかけても、料理の特徴が伝わる写真にするのは簡単ではありません。専門家に任せれば知識の不足を補える可能性がありますが、費用が増えます。そのため、時間・知識・費用の三つがそろって、小規模な店舗にとって高品質な画像を用意する壁になります。
These are separate problems, but they affect one another. Without enough time, a merchant cannot prepare to take photos independently. Without enough know-how, it is not easy to create a photo that communicates the food's features even with extra time. Hiring a professional may compensate for a lack of know-how, but it increases cost. Together, time, know-how, and cost create a barrier for small merchants who want to prepare high-quality images.
メニューが変わると、一度の撮影では足りない
When the menu changes, one photo shoot is not enough
メニューの変更も、この問題を大きくします。たとえば、新しい料理を追加したり、料理の盛り付けを変えたりすると、以前に専門家が撮影した写真は、すぐに現在の提供内容を表さなくなることがあります。写真を撮り直さなければ、写真と実物のずれが残ります。しかし、メニューが変わるたびにプロの撮影を繰り返すと、時間と費用がさらに必要です。これは、固定された写真を一度だけ用意する方法が、変化するメニューには十分でないということです。これは説明のための例ですが、発表で示された「メニュー変更」と「撮影の負担」の関係を具体化しています。
Menu changes make this problem larger. For example, when a new dish is added or the plating of a dish changes, a photo previously taken by a professional may soon stop representing what is currently served. If the photo is not retaken, the mismatch between the photo and the real food remains. However, repeating a professional photo shoot every time the menu changes requires even more time and money. A one-time set of fixed photos is therefore not enough for a changing menu. This is an explanatory example, made concrete from the relationship between “menu changes” and the “burden of photography” described in the presentation.

The presenters introduce these three items as themes from conversations with merchants. We should not conclude that the three causes occur in the same proportion at every small merchant, or interpret them as the results of a complete causal study. The important point is that an image-improvement system should not assume that merchants have unlimited time, photography know-how, or money. In the discussion that follows, the practical questions are which images to improve and how to improve them without losing authenticity.
